Blueberry Curry Copper River Salmon
Salmon 3 2/3 (103g) 1 fillet
Snap Peas 1 1/2oz (41g) 4 ea
Tomatoes 1 1/3oz (39g) 2ea
Cauliflower 3/4oz (21g) 2ea
Salt (to taste)
Olive (to coat)
Blueberry Curry Sauce
Blueberry relish sauce 6 2/3oz (187g)
Green curry Paste 1/3oz (10g) 1 Tbsp
Rice noodles 1 3/4oz (53g) 1 handful
I don’t always post everything to you guys, because there isn’t always time to record a video. Also I think maybe you guys wouldn’t be into the recipe base on the lefts overs I make out of it, plus most turn there noses once they hear the word leftover. I know Girlfriend is like that =p
But really I swear I’ll go to the fridge open it up then see nothing, then come back a min later and open it again, like maybe I missed that pudding or something and say “oh goodness! There you are!” I know I am not alone on this haha.
First off, if you don’t have the sauce half the ( Blueberry relish recipe) start that and come back and start on the next step.
For the rice noodles
Grab a pot of water and bring to a boil, once that happens. You’ll going to wait until the last 3 mins of the salmon from being done cooking to add your noodles. (don’t worry I’ll remind you)
Cutting all your veggies
Just rough chop your cauliflower and snap peas, then quarter your tomatoes . Grab your tomatoes and cauliflower and coat with olive oil, season with salt to taste and place in the oven at 400F(204C) After your Blueberry relish sauce is ready.
Copper river Salmon
Turn on your skillet on high heat. Grab your salmon, if it’s not portion out already, portion, and coat with olive oil and season with salt. Then sear the salmon in the skillet and turn over once you get that beautiful color or once you hear less sizzling.
Add your sauce and your green curry paste. Add water just like in my video, I mention adding water will not ruin the product it’s just to not have sauce burning.
Don’t forget to have your veggies in the oven, everything other than the snap peas
Cook for 5-6 mins
(Don’t forget the noodles..)
Add your noodles to the your boiling water, hydrate them, should take 3 to 4 mins. Don’t worry the sauce will finish cooking the noodles.
Pull out your salmon when you are about to add to the noodles to the sauce. If you don’t care about getting sauce on the top of the salmon and turning it purple. Then never mind haha, but just coat the noodles with the sauce
Plate your food! Dinner is served!

Question for you
Do you do this at home, when you are hungry and want something do you open the fridge close it (because nothing was there) then come back 2 mins later doing it again because you think you might of missed that pudding of some sort?
