Blueberry Granola Parfait
Honey yogurt 5 2/3oz (159g) 3/4 cup
Blueberries (66g) 3/4 cup
Blueberry granola bars 1.27oz (34g) 2 bars
Mint 1 leaf
Always good to have a snack especially when your significant other doesn’t want the beast to come out. This recipe is a cool after dinner for me with some tea, but that’s just me.
- Make your Granola mix (recipe here)
- Grab a clean glass, if not, get some vinegar and clean it up (boo yeah! )
- With a cutting board, you are going to chop the granola
- Add your granola to the bottom
- Then add some of your yogurt
- Add your fruit
- Granola again
- Yogurt with spoon and try to fill the edges around the glass if you can
- Finish with blueberries and mint on top
What if I don’t have the time to make the granola recipe?
You don’t have to make my granola recipe, just buy some granola already prepared and your solid!
It’s just a flavor, plus now you’re having less sugar and not to mention blackberries might not be in season when you’re looking at this
Can I use any yogurt?
You can use whatever you want. Heck, if I were in my country I would be using my favorite yogurt, its best yogurt I have ever had in my life, I digress…
If you are going t0 do this in bulk for people ahead of time
Somethings you have to consider. If you do this ahead of time and you use my blueberry granola and allow it to it will seep out blueberry sugar, make it soft and no longer crunchy. Also, it discolored the yogurt blue, making it look to the human eye it’s an old product and very undesirable.
You have two options
- Option 1!
Get your glasses or whatever container you’re going to use you’ve not going to have the granola on the bottom. Think of it as Starbucks or yogurt you buy that have separated already, just like I said above it just gets soaked.
So you can just change the layers and maybe just have one layer of granola on top and call it a day while you have blueberries in the middle and yogurt with two layers.
If you want to maintain quality at higher volume, this is how you do it.
- Option 2! 25 servings and up
Glass racks (or Carlisle RG25-114 Opticlean)
When I have to serve 1000 plus people, I tend to use glass racks. I stack them four racks high, then I place all my glasses inside and add the yogurt using an ice cream scoop or spoon. After I add the fruit in the middle and yogurt again. Tap the rack on the table if you want to be super perfect and have everything flat.
Then, at the last minute when I’m about to serve those 1000 people, I’m with another co-worker and 10 to 15 servers picking up to take to the customer.
I would place the granola, and the other person adds that extra garnish like mint. Then the servers clean it dirty glass if that happens or even the banquet captain assistant will double check it’s clean. If I’m just two people or even doing it by myself, I have to do this all myself.
Don’t throw out that water that surfaces in the yogurt, that’s where all the nutrition is. Yikes, so many times I’ve heard that… But wait why does my mother do it, even though she says so not too? Hmm…interesting!
