Making Dapple Fire Pluot dressing
- With your knife slice the pluot in half and de-Pitt
- Rough chop with you knife so it can cook faster
- Grab yourself a pan and add the vinegar and throw in the chopped pluots
- Bring to a boil
- Once it has come to a boil, continue boiling for three mins and pull off
- Put in your Vitamix (blender)
- blend the fruit until smooth
- Add your olive slowly
- Then season with salt until your throat no longer burns
- Pour into a container of your liking (mine is recycled =p)
Do I need these plums?
If you are going for the color, then yes. You can use Dino Egg Pluots if you want. Can use a purple plum as a substitute as well.
What if I can’t find champagne vinegar can I use something else?
Yes, you can use white balsamic vinegar, white wine vinegar or white vinegar.
Does it matter what kind of Olive oil I use?
It’s always best to use extra-virgin oil in salad dressing
Grey salt, what is that and where do I find that?
I don’t know if you can get the same kind as me; I had to fight a shark to get this =P Just kidding! Speciality stores, normal salt, is fine
Do I need to cook the pluots like you?
Yes, because you want to break down the fibers of the pluots. Otherwise, you will have a chunky sauce and not a smooth dressing, not mention it allows to the pectin from the pluots activate making it a emulsify vinaigrette
Doing this for 25 to 1000 people
Simple and easy! You’ll be brushing your shoulders when you finish it! Haha
Making a dressing for a party 25 people
I would just use your blender and total the weight for example ( from grams ) 340g is the total of all ingredients. Then divide by 45 which will be ( 1.5oz) will give you 7.5 portions. Now you just have to times this by four but that will give you 30 portions
What you will need to do is just cook the dapple fire pluot in a bigger pan and do the same thing and follow the rest of the recipe as normal.
What if you want exact?
Easy you know it will be 45 grams for one person so times it by 45*25 = 1125
At this moment I realized I think I should give you guys the % of each ingredient haha. When, in fact, I do this for big parties haha sorry about that I can’t stop laughing I can’t believe just occur to me!
Ok always start from the lowest number for example olive oil is 23.2227 so from there you will times the total number that is 1125*23.2227=26,125.5375/100=261.2553
261.2553 is how much you should be using for olive oil
Now from 261.2553 this is how much you should be taking from the total number that is the original number 1125
Now subtract 1125-261.2553=863.7447
Do the same for champagne vinegar 37.9146%
1125*37.9146%=42,653.925/100=426.5392-863.7447=437.2055 that is how champagne vinegar should be using 437grams unless you have a milligram scale 437.2055
Now to find the how much pluots you use this part is the quick part!
For 25 people, I need to use 426g of Dapple fire plutos
If you looked at this and said screw that!
Just times it by 4 for 25 people but will make 30 portions lol oh well!
Making vinaigrette for 1000 people
Again comes down to a bigger pot. Now the advantage of this is you can pour this into a bucket and use a stick blender, as we call in the kitchen or the Robot Coupe MP 450 Turbo 18″ Immersion Blender – 120V (way too long) stick blender is better!
