Hazelnut Cayenne Basil Yogurt Dressing
Honey Yogurt 4 2/3oz (133g) 3/4cup
hazelnut .70oz (19g) 1/4cup
lemon (36g) 1/2 whole lemon zest
Basil 0.010oz (0.28g) 1 leaf
Cucumber 2 2/3 (76g) 1/2 ea
Tomato 1.93oz (55g) 6 ea
blueberries 1.35oz (39g) 1/2 cup
Baby Kale 2 1/8(59g) handful
Yogurt mixed 2 1/4(63g)
For starters, I made this dressing based on Erin. She was going throw out the crumbs of the hazelnuts at the bottom of a bag, and I said heck No! I think I can come up with something, and sure enough this awesome dressing was made.
Making the Dressing
- Grab your bowl
- Add the yogurt
- Zest your lemon with a Microplane
- Slice the lemon in half
- Squeeze your lemon in the bowl
- Add your hazelnuts
- Stack your basil and slice very thinly as the French call it chiffonade
- Whisk until well mixed
- Put in a container, since you will not use all of the dressing
Making the Salad
- Slice your cherry tomatoes in half
- Slice your cucumber in half
- and slice the rest
- In a bowl grab a handful of kale
- then add the yogurt
- mix with tongs
- add more yogurt if the lettuce is dry,
- do this until well mixed
- add the rest of your ingredients
What if I don’t have the same yogurt?
You don’t have to use the yogurt I am using. You can get plain yogurt and just add honey or any yogurt is fine. It’s all about the flavor you like so doesn’t matter.
What if I have yogurt I want to use up at home, but it has fruit sauce in it?
Not a problem, just think of it as another fruit and just add the other ingredients
If you want to make this for 6 people, just times the recipe by 6 and follow the same process and just have a bigger bowl.
What if I don’t have the same lettuce?
No big deal, this dressing will go great on anything honestly, but wouldn’t suggest iceberg lettuce since too much water content in the product.
Since the calorie count was so low would you suggest adding meat?
I would totally do that!!! Add some chicken, I had no idea it was that low… It was good though!!!! Heck never knew that my dog loved cucumbers. Bastard went into my bowl to steal some and leaves me with fewer calories taken yikes!
What if I can’t get the same cayenne hazelnuts as you?
Not a big deal! Just roast the hazelnuts and add some brown sugar for similar taste, then add cayenne and you are solid my friend!

What will I need for a plate up?
1. If you have the facility or home space for this, this is my number #1 way to do because you can personally do this by yourself, which is GREAT! I call this the hotel and stadium plate up.
By having a tons of tables, which can cost will $56 ea and just doing for 300 people will cost you $1000 dollars for 16 tables if you are using round plates and can fit up to 24 to 18, if this can’t be done and I can’t do this unless I work at hotel or a stadium, most likely your going to have to look at option 2
- Place all your plates on the table usually can fit up to 18 to 24 and if you are using rectangle plates, you can fit 40+ plates depending on size.
- Add your lettuce on, you can do this 1 hour before and if you are doing heaps of covers you might have to place the lettuce on 2 hours before
- add your garnishes that are not wet on, so it doesn’t break down your lettuce at the last 5 mins you’re about to send out the plates
- have one person put the garnishes
- The other person sauces the plates while another take the plates to the customers
- This method is very useful
This is usually a “go to” method, I call this the train method you’ll have that same table and have You’ll have your plates on your left hand and push to the right while placing your lettuce in the middle, then adding the dressing and garnishes it’s good to have 5 people
- One putting the lettuce on and while grabbing the plates and pushing to the next person
- One person placing the garnishes on
- then last person can use a pastry bag or squeeze bottle, or even a candy funnel (called sauce gun too) to put the dressing on over the plate
- The last 2 people are usually the servers cleaning the plate and taking the customers
For me since that’s what actually works for space and usually I have people working with me, but I have done this by myself in too many cases, it’s not a problem I just want my customer to have the food quickly as possible. So don’t sweat being the only person plating and just relax this is the fun part!!!!
You will have to have the lettuce all cleaned, and it’s cheaper to buy boxes ( or as we call it a case) That’s relatively easy!
