I’ve been using these for years and when it comes to fine dining you need this because of obsessive chefs like myself wants it perfect. I will say it quickly gets paper thin cuts out of the way. With slicing so evenly your food all cooks the same, none of the biting into a piece that was not cooked all the way. On a pretty factor, your food look great and makes people think you have beautiful knife skills.
The mandoline will come with attachments for not only just slicing, but you can use it to make a julienne cut or waffle fries/chips or french fries. Now who doesn’t love french fries.
Number one complain about this product
Safety is a joke to this slicer, comes with this plastic guard (which I have thrown away each time I brought this) one time when I was in the industry for only a couple years I decide to show off how fast I was on this mandoline ( not a good idea by the way…) This co worker of mine was already on edge since, 5 cooks got fired due to not following instructions from the chef. I call out James since him and I were the only ones and I said; “look James look how fast I can go on this, as I am not looking at my hands (this was during the time where my chef was teaching me that you have to close your eyes cutting with your knife and it will become 2nd nature and you’ll never cut yourself) I cut all 4 knuckles…
How safe is it?
It’s not… You are facing your hand towards the blade and I assure you have heard the saying cut away from you, no way to avoid that just like I told you about cutting all my knuckles, it’s because you have to pay attention. A friend of mine, big tough guy all big talk he cut his thumb and he was crying in the ally way. You can use a cut glove, or a chain mail cut glove if you are afraid your going to cut yourself
Does one of the blades julienne?
Yes it does, but it’t not perfect it can looks like someone was using a dual knife.
How is it for frozen food?
It’s works great! Thats how I do my candied meyer lemon and for any other roots or fruits
Can I slice anything on it?
You can, but if you want to keep the product whole, it hard to do that with some of the mandolines width, then you have to slice in half so it can fit into the mandoline to slice.
Can I get replacement blades?
Yes, Amazon sell them
- Working in a kitchen co workers will dull the blade for you when they “borrow” it.
- Co-workers will steal this… ( not mine of course =P)
- when slicing for a while food will get stuck in the screws
- Hand washing recommended not dishwasher safe
It’s very versatile, I find it very useful, I recommend it. Saves time trying to get the perfect cuts, I will remind you that you do need to pay attention while using this because you don’t want to cut yourself. At the end of the day, ask yourself this do you need it? It’s relativity inexpensive all depends on how much you would use it.
