I am not sure about your area, but this past weekend it was HOT here in Seattle. When its hot I like to eat lighter meals that are refreshing. I got some awesome cucumbers at the market that I was planning to make some delicious pickles out of, but this hot day called for something else.
Why not a cucumber salad as a snack? Its refreshing, high in vitamins and not to mention easy to make. Because on hot days, there is no reason to add to the heat by turning on the oven or stove. Plus my dog loves cucumbers, him and I sat on the couch turned on Netflix and enjoyed.
I used pickling cucumbers for this, but you can use which ever cucumbers you like. This is also a great healthy light side dish if you have a BBQ or a potluck coming up. If you want add a little extra to the salad you can add a little baby kale or salad green, cooked and chilled wheat berries or maybe even a little goat cheese crumble. I hope you enjoy.
Cucumber 7.60oz(215g) 2 ea
Mint 0.048oz(1.33g) 1 stem
Tomato 1.05oz (29g) 1 ea
Chilli Powder Pinch
Salt (to taste)
Making the Salad
- Slice in half the cucumber and slice into quarter moons
- Slice and slice then dice your tomatoes
- Pick your mint and bunch together
- Slice lemons in half
- Grab all ingredients and place in bowl squeeze your lemons and season to taste with salt
Side note: If you cut the cucumber too thin the salad can get soggy quicker, than if you were to cut the cucumber a little thicker.
